Quick Roasted Asparagus Recipe

Poultry, red meats, and fish make regular appearances at dinner. Seasonal vegetables like asparagus help to avoid mealtime repetitiveness. Litehouse’s Vinaigrettes are outstanding ingredients for quick-roasting asparagus and other spring vegetables. I’ve tried several vinaigrettes for marinating and roasting vegetables, but my favorite is Litehouse Red Wine Olive Oil Vinaigrette. It includes Napa Valley Red Wine vinegar and olive oil and a delicious blend of spices. Tasty salads with this vinaigrette are a given, but as a marinade, it’s nothing short of amazing.

Benefits of Local Vegetables

Vegetables are most attractive and lower in cost when they are in season. Locally available seasonal vegetables are healthier because there they don’t travel great distances and thus lose vital nutrients. According to Nutrition.gov, fresh vegetables “are full of antioxidants and phytonutrients.” Knowing this, I want the freshest vegetables possible, which means shopping at local farmer’s markets regularly.

Roasting Asparagus

For quick meals, fewer ingredients are best. This recipe requires just three ingredients: fresh asparagus, Litehouse’s Red Wine Olive Oil Vinaigrette, and Litehouse Freeze Dried Dill. Add a dash of salt, if you prefer, but honestly, you don’t need it. Weeknight meals get a boost of chic when you add a roasted vegetable. Other spring vegetables that roast well after being marinated with Litehouse Vinaigrettes include broccoli, broccolini, fennel, snow peas, and white asparagus. Don’t stop there, though. Try marinating and roasting vegetables throughout the seasons. I can’t wait to marinate and grill summer veggies.

I prefer my condiments to do double duty in my kitchen. Tarter sauce accompanies fish but it also dresses my potato salad (try it). Quick Roasted Asparagus Recipe

Fresh, seasonal vegetables are tasty and healthy. Asparagus, a popular spring vegetable, is quick and delicious when roasted with Litehouse Vinaigrette dressings and marinades, such as Red Wine Olive Oil Vinaigrette.

Preparing to make Quick Roasted Asparagus


Rinse asparagus, lay on paper towels or a clean dish towel, and pat dry. Cut an inch from the bottom stems and place asparagus in a large bowl and pour on the vinaigrette. Move asparagus around bowl to mix with vinaigrette. Refrigerate for 15 minutes while pre-heating oven to 400°F.After 15 minutes, place asparagus on baking sheet. Roast asparagus for 10 minutes. Garnish with Litehouse Freeze Dried Dill and serve immediately.
