Quick Roasted Asparagus

Serves 3-4 | Finish in 25 minutes

Fresh, seasonal vegetables are tasty and healthy. Asparagus, a popular spring vegetable, is quick and delicious when roasted with Litehouse Vinaigrette dressings and marinades, such as Red Wine Olive Oil Vinaigrette.


  • 1 lb. Fresh Asparagus
  • ½ c. Litehouse® Red Wine Olive Oil Vinaigrette
  • Dash Salt (optional)
  • Litehouse Freeze Dried Dill (as a garnish)


  1. Rinse asparagus, lay on paper towels or a clean dish towel, and pat dry. Cut an inch from the bottom stems and place asparagus in a large bowl and pour on the vinaigrette. Move asparagus around bowl to mix with vinaigrette. Refrigerate for 15 minutes while pre-heating oven to 400°F.
  2. After 15 minutes, place asparagus on baking sheet. Roast asparagus for 10 minutes. Garnish with Litehouse Freeze Dried Dill and serve immediately.
