1. Bring a large, generously salted pot of water to a boil. Add the Little Potato Company Little Yellows and cook 7-9 minutes, until fork tender.2. Meanwhile, in a small bowl whisk together the Dijon mustard, honey, 2 teaspoons of the olive oil, the Litehouse Freeze Dried Garlic, Litehouse Freeze Dried Oregano, salt, paprika, and black pepper.3. When the potatoes are tender, use a slotted spoon to remove them from the water.4. Heat a large skillet over medium heat. Add the remaining two tablespoons of olive oil and the potatoes. Cook the potatoes for 10 minutes, until golden brown.5. Add the honey mustard sauce and cook another minute, until the glaze thickens.6. Serve with a garnish of Litehouse Freeze Dried Chives.
