Talk about a winner winner chicken dinner! I first started using this technique in my potatoes but thought, why not make some hasselback chicken! This quick and easy weeknight dinner is family approved and the results are so unique.
For my Hasselback Cheesy Ranch Chicken, I used multi coloured peppers, red onion, a sharp cheddar blend and Litehouse Homestyle Ranch. I am never without a jar or two of Homestyle Ranch. It’s our go-to for veggies, salad and dipping our pizza on Friday nights! You may have noticed the label has a fun new look but inside is still the same great taste with no artificial flavours, color or preservatives. It’s also gluten free, which is good to know if you’re like me and should be avoiding such things.
I’ll be adding this recipe to our dinner rotation but to keep it interesting I plan on switching up the dressing and veggies. Next up will be hasselback chicken drizzled with Litehouse Caesar dressing, stuffed with thin asparagus and topped with grated parmesan. The options are endless!
You will have leftover onions and peppers after making this recipe. If you bake up some extra plain chicken while you’re at it, you’ll be all set up to make quesadilla’s later that week!
