Since I was a kid steak has always been seen as something that you’d eat on a special occasion. As an adult I realize that cost is one of the biggest reasons why you don’t get you eat a filet mignon at every meal, plus at some point your doctor will probably start telling you to watch your cholesterol. But let’s be honest, everyone feels a little fancy when they get to eat a delicious steak but to make it a little easier to serve to a group, I thought that a toasty steak sandwich topped with slightly melted blue cheese would be the best option.
Steak tends to be a little on the pricy side but you can often times find something on sale to keep these sandwiches affordable. I like to use a flank steak or strip steak and cook it to medium-rare, then slice it thin to create the perfect steak sandwich. You can grill or broil the steak ahead of time and allow it to rest to keep all of the juices inside. You’ll be toasting the sandwiches in the oven so it will reheat the steak nicely. The other key ingredient on these sandwiches are the caramelized onions. If you have never prepared caramelized onions the key is to cook them slowly over low heat to really bring out a rich flavor.
To really add another level of flavor I topped off the sandwiches with Litehouse’s Simply Artisan Blue Cheese Crumbles for a rich, creamy and nutty flavor. When you toast the sandwiches in the oven before serving the result will be a slightly melted cheese that pairs perfectly with the caramelized onions, rare steak and peppery arugula. Serve these sandwiches with a side of baked steak fries or a small salad dressed with balsamic dressing and your friends and family will feel like they’ve won the dinner lottery.
