Beef and Tomato Noodle Soup

Is there a better way to spend a Sunday than whipping up a big pot of homemade soup? Not right now anyway. The weather is still hovering below zero and the wind is howling! I declared it a pajama day and while the kids tackled their bedroom messes, I made this Beef and Tomato Noodle Soup for dinner.

My memories are filled with homemade soup. There’s no mistaking it, the way the smell drifts through the entire house with a steamy comforting aroma.  Growing up, my brother and I were fortunate to have our Mom stay home with us. A pot of homemade soup was often simmering all morning. To this day when I drop my kids off at Grandma’s house she has a pot of soup going for her little daycare kids at lunch. It takes me right back to the days of running home for lunch, often bringing a school friend or two with me.

Tonight we’re enjoying this Beef and Tomato Noodle Soup, which smells and tastes amazing, perfect for a cold evening! To cut down on prep time I used quite a few freeze dried herbs. I love how they’re always ready to go when I am. No rinsing or chopping necessary!  As for the noodles, I seem to always cook way too much so I had those on hand as well. Soup is a great way to use up partial bags of veggies, pasta or rice at the end of the week.

This soup can be made in just over an hour in a large pot or a slow cooker for about six hours on low.

Bring date-night home this weekend by creating a rich and flavorful (and secretly healthier) steak and alfredo pasta. Layers of rich cream sauce, blue-cheese, spinach and sundried tomatoes are topped off with a balsamic reduction for the ultimate pasta dinner.

Beef and Tomato Noodle Soup
Ingredients

Directions

In a large pot or dutch oven, brown the ground beef. Drain and rinse well.Add the beef back to the pot with the chopped onions, garlic, herbs and tomato paste. Stir and cook for a few minutes. Add the rest of the ingredients except the pasta and let the soup come up to a boil. Turn the heat down and simmer for an hour. Add the pasta and serve.
