We are so super excited about the Super Bowl this year because our team is playing! I’m only going to say this once. Go Patriots! Since that is out of the way let’s talk about the next most important aspect of the Superbowl, the food! You just cannot enjoy a football game if you aren’t surrounded by incredible food.

This year we are keeping things healthy…er. By healthy I don’t mean “boring chick food” and I don’t mean veggie sticks and fat free dip. I live with 1 man and 3 soon to be men, who all expect some messy “man food” on this important day. Football food must keep them motivated, masculated, and energized enough to cheer their team on all through the night! I’m talking big, meaty, exciting, man food with all the fun flavors you expect to taste while watching football.

My Smokey Chicken Meatball Sliders w/ Jalapeno Slaw will rock your man’s world without rocking the calorie boat. The best part? He won’t even realize that he’s eating a lighter and healthier version of a high calorie football staple!

Sliders are a very popular dish to serve at any football party and are simply a must for any big game bash. Replacing beef with a mixture of white and dark ground chicken meat cuts back on not only calories but unwanted fats as well while maintaining a moist and meaty meatball texture.

I decided to add some major smoky flavor enhancers such as cumin, chili powder, and chipotle peppers to give the classic smoky flavor usually found in bacon without actually having to add the bacon. The next big calorie cutter? Cheese! Cut the cheese! Wait no, cut out the cheese. Instead top your meatball sliders with a creamy Jalapeno Slaw. Not only do you get the creaminess usually provided by high calorie cheeses but you also get a dose of veggies and a fresh zing from Litehouse’s Jalapeno Ranch Dressing.

Not convinced to make the healthier choice quite yet? What if I told you a platter of 24 of these amazing sliders can be ready to serve in as little as 30 minutes? Cooking is quick and mess free because I bake the meatballs instead of pan frying them. No turning, no burning, no grease splatters. Instead of cooking/melting greasy toppings you simply add a mountainous scoop of fresh Jalapeno Slaw and call it good. They look amazing, they smell amazing, and they taste better than any football dish I’ve ever cooked. That was the official census in the Hersey house, from all of my favorite little men.

Smokey Chicken Meatball Sliders with Jalapeno Slaw Recipe

Serve these lighter sliders at your Superbowl bash and watch the men dig in! The Smokey Chicken Meatballs keep the dish low fat and delicious and the Jalapeno Slaw gives a fresh creamy flavor along with a dose of veggies!

Just made Smokey Chicken Meatball Slider with Jalapeno Slaw
Ingredients
  • 2 lbsGround Chicken (mix of dark and white meat)
  • ½ cupBread Crumbs
  • ¼ cupSkim Milk
  • 2 eaEggs
  • 2 eaChipotle Peppers in Adobo, finely chopped
  • 2 tspAdobo Sauce, from the can of chipotle peppers
  • 1 tbspOnion Powder
  • 1 tbspChili Powder
  • 2 tspCumin
  • 2 tspGarlic Powder
  • 2 ½ tspSalt
  • 16 ozColeslaw Mix, bag
  • 2 tbsp Litehouse® Freeze Dried Cilantro
  • ⅔ cupLitehouse® Jalapeno Ranch Dressing
  • 24 eaSlider Rolls

Directions

Preheat the oven to 400°F and line a baking sheet with foil or parchment paper.In a large bowl stir together the chicken, bread crumbs, milk, eggs, chipotle peppers, adobo, onion powder, chili powder, garlic powder, cumin, and salt. Wet your hands down with water and roll the meat mixture into 24 meatballs relatively even in size. Bake meatballs for 20-25 minutes.Meanwhile gently toss together the coleslaw mix, cilantro, and Jalapeno Ranch.Remove the meatballs from the baking sheet and set aside.Place the slider rolls face up on the baking sheet and place in the oven until toasted, just a few minutes!Build the sliders! Place the bottoms of the toasted rolls on a platter. Top each with a Smokey Chicken Meatball and a large scoop of Jalapeno Slaw. Top with remaining toasted rolls and serve! Use large toothpicks to hold sliders together for easy serving.
