A Greek favorite, the combination of feta and watermelon make the perfect summer dessert or side dish.
- 1 medium Seedless Watermelon, cut into 1” cubes
- 1 Red Onion, sliced
- ½ c. Litehouse® Simply Artisan Feta Cheese Crumbles
- ½ c. Coarsely Chopped Mint Leaves
- Juice of 1 Lime
- ¼ c. Olive Oil
- Salt and Pepper
- Combine the watermelon, onion and mint in a large bowl. Toss the ingredients with the lime juice, olive oil and salt and pepper to taste.
- Right before serving, top the salad with Litehouse® Simply Artisan Feta Cheese Crumbles and toss gently to combine. Serve immediately.
