Watermelon Salad with Feta and Mint

Serves 8 | Finish in 10 minutes

A Greek favorite, the combination of feta and watermelon make the perfect summer dessert or side dish.


  • 1 medium Seedless Watermelon, cut into 1” cubes
  • 1 Red Onion, sliced
  • ½ c. Litehouse® Simply Artisan Feta Cheese Crumbles
  • ½ c. Coarsely Chopped Mint Leaves
  • Juice of 1 Lime
  • ¼ c. Olive Oil
  • Salt and Pepper


  1. Combine the watermelon, onion and mint in a large bowl. Toss the ingredients with the lime juice, olive oil and salt and pepper to taste.
  2. Right before serving, top the salad with Litehouse® Simply Artisan Feta Cheese Crumbles and toss gently to combine. Serve immediately.
