A Greek favorite, the combination of feta and watermelon make the perfect summer dessert or side dish.
1 medium seedless watermelon cut into 1” cubes
1 red onion sliced
½ cup Litehouse® Feta Cheese Crumbles
½ cup coarsely chopped mint leaves
Juice of 1 lime
¼ cup olive oil
Salt and pepper
Combine the watermelon, onion and mint in a large bowl. Toss the ingredients with the lime juice, olive oil and salt and pepper to taste. Right before serving, top the salad with Litehouse® Feta Cheese Crumbles and toss gently to combine. Serve immediately.
