Pomegranate Glazed Meatballs

Serves 8 (15-17 meatballs) | Finish in 1 hour

Pomegranate juice is made into a sweet glaze for these savory meatballs topped with delicious feta cheese. This is the perfect appetizer for the New Year!


1 lb. ground beef
1-cup panko bread crumbs
1-cup milk
1 Tbsp. Litehouse® Instantly Fresh Mint
2 Tbls Litehouse® Instantly Fresh Red Onion
1 Tbls Litehouse® Instantly Fresh Oregano
½ cup Litehouse® Feta Cheese Crumbles
½ tsp salt
½ tsp pepper

 For the glaze:
1-cup pomegranate juice
½ cup sugar
2 Tbsp. balsamic vinegar 

½ cup Litehouse® Feta Cheese Crumbles
1 tsp Litehouse® Instantly Fresh Parsley


Preheat oven to 350. Mix all meatball ingredients in a bowl until combined. Shape into golf ball sized meatballs and place in a greased baking pan. Bake for 35-40 minutes. When meatballs are almost finished, place the pomegranate juice, sugar and balsamic vinegar in a saucepan and heat until boiling. Continue to let boil for five minutes while stirring. Pour sauce over meatballs. Top with Litehouse® Feta Cheese and Parsley.
