Pomegranate Glazed Meatballs Recipe

Entertaining can be both stressful and fun. The stress can come from planning a menu, cleaning the house and actually cooking the meal so it turns out delicious. Far too many times I’ve cooked a new recipe only for it to come out wrong. On a regular night with my family I could throw a pizza in the oven for a back up meal, but when you have guests, it’s just not that easy (and it’s quite embarrassing)!

Here are a few tips when planning a no-fail menu for guests:

  • Try your recipes ahead of time. Making that delicious new recipe you found on Pinterest might be tempting, but new recipes often fail for one reason or another. Test your recipe on your family before making it for guests.
  • Slow Cooker meals. Meals in the slow cooker are easy and require little prep and that means little stress! Try this Balsamic Pot Roast or Sesame Ginger Pork Tacos!
  • Prep ahead of time. Do all of your chopping, dicing and mixing ahead of time! For an easy appetizer or main dish to entertain your guests with, try these Pomegranate Glazed Meatballs!

You can prep your meatballs in advance and keep them in the fridge until you are ready to bake them. You could even make a big batch of meatballs and freeze for the days you want a quick meal. Meatballs are easy! Simply mix the beef, panko breadcrumbs, milk and egg with Litehouse Freeze Dried Mint, Oregano and Onion. Roll the beef mixture into golf ball-sized meatballs and bake for about 40 minutes.

Pomegranate juice is made into a sweet glaze for these savory meatballs topped with delicious feta cheese. This is the perfect appetizer for the New Year!

Directions

Preheat oven to 350.Mix all meatball ingredients in a bowl until combined. Shape into golf ball sized meatballs and place in a greased baking pan. Bake for 35-40 minutes.When meatballs are almost finished, place the pomegranate juice, sugar and balsamic vinegar in a saucepan and heat until boiling. Continue to let boil for five minutes while stirring. Pour sauce over meatballs. Top with Litehouse® Feta Cheese and Parsley.
