Mediterranean Grilled Chicken Salad with Tzatziki Ranch

Ingredients

For Chicken:

  • 1 lb. Chicken Breasts
  • 3 tbsp. Olive Oil
  • 2 tbsp. Lemon Juice
  • 1 tbsp. Red Wine Vinegar
  • ½ tsp. Salt
  • 1 tsp. Litehouse Freeze Dried Oregano
  • ½ tsp. Pepper
  • ½ tsp. Garlic Powder

For Salad:

  • 1 head of Romaine Lettuce
  • 1 c. Halved Cherry Tomatoes
  • 1 c. Thinly Sliced Cucumber
  • ½ c. Thinly Sliced Radish
  • ½ c. Thinly Sliced Red Onion
  • ½ c. Halved Kalamata Olives
  • Litehouse® Purely Balanced Tzatziki Ranch Greek Yogurt Dressing
  • Pita Chips, for topping
  • Crumbled Feta, for topping

 

Directions

  1. Whisk together olive oil, lemon juice, red wine vinegar, salt, oregano, pepper and garlic powder. Coat chicken in marinade, cover and refrigerate for 30 minutes. 
  2. Grill chicken for about 6 minutes on each side, until cooked through.
  3. Toss lettuce in some of the dressing. Top with tomatoes, cucumber, radish, red onion, olives, sliced chicken breast and pita chips. Top with more Tzatziki Ranch dressing and crumbled feta.
