Edamame Greek Salad

A delicious and practical way to help your kids eat their vegetables!

Ingredients

  • 1 Cucumber, diced
  • 1 Green Pepper, diced
  • 10 Grape Tomatoes, quartered
  • 1/2 c. Edamame
  • 8 Kalamata Olives, pitted and sliced
  • 1/2 c. Litehous Balsamic Dressing
  • 1 tsp. Litehouse® Freeze Dried Oregano
  • 1 tbsp. Litehouse® Freeze Dried Red Onion
  • 1/4 c. Litehouse® Simply Artisan Feta Cheese, crumbled
  • Salt and Pepper, to taste

Directions

In a large bowl combine all the vegetables. Add the dressing and herbs then toss to combine. Top with feta cheese and toss again before serving.
