Grabbing a piece of Summer Squash and Blue Cheese Flatbread

It’s about that time of the summer when home gardeners start to find themselves with an abundance of produce. Tomatoes, cucumbers and summer squash are usually starting to pile up on kitchen counters and chefs like you and me are trying to find every way under the sun to use them! One of my favorite summer snacks/appetizer/meals are flatbreads on the grill (or in the oven) loaded with some of my summer garden vegetables. The latest combination that I have been loving is summers squash and blue cheese flatbreads.

Picking up a package of flatbread at the grocery store can lead to some of the most amazing meals. When I’m in a dinner bind or am looking for a last-minute appetizer to serve friends, I always reach for the flatbreads at the grocery store. If you can’t find flatbreads, naan works equally as well! You can use a simple olive oil base or a soft cheese and pile on the fresh vegetables like onion, zucchini, tomato and eggplant. Grilling them is my favorite way to cook them to get the ultimate crispy crust, or you can pop them in the oven on a pizza stone. The best way to finish off a flatbread is with a soft, crumbled cheese or fresh herbs when they come out of the oven or off the grill. I like to use Simply Artisan Reserve Blue Cheese Crumbles for a sharp, nutty finish.
