This is a great alternative to a traditional lettuce salad and is packed with protein and nutrients.
- 1 medium Avocado, diced
- 1 15 oz. can Chickpeas, drained and rinsed
- 1/3 c. Litehouse® Simply Artisan Feta Cheese Crumbles
- 1 tsp. Litehouse® Freeze Dried Parsley
- 1 tbsp. Litehouse® Freeze Dried Spring Onion
- Juice of 1 Lime
- Salt and Pepper, to taste
- Place the chickpeas, feta and avocado into a large bowl. Season with parsley and spring onion. Toss gently to combine. Squeeze the juice of 1 lime over the salad along with salt and pepper just before serving.
