Avocado Chickpea Salad

Serves 4 | Finish in 15 minutes

This is a great alternative to a traditional lettuce salad and is packed with protein and nutrients.


  • 1 medium Avocado, diced
  • 1 15 oz. can Chickpeas, drained and rinsed
  • 1/3 c. Litehouse® Simply Artisan Feta Cheese Crumbles
  • 1 tsp. Litehouse® Freeze Dried Parsley
  • 1 tbsp. Litehouse® Freeze Dried Spring Onion
  • Juice of 1 Lime
  • Salt and Pepper, to taste


  1. Place the chickpeas, feta and avocado into a large bowl. Season with parsley and spring onion. Toss gently to combine. Squeeze the juice of 1 lime over the salad along with salt and pepper just before serving.
