Just when I think I’ve eaten feta cheese every way imaginable (and believe me, this is anything but a complaint), I find another way to enjoy one of my favorite cheeses – whipped! What a genius idea to blend up feta cheese into a spreadable, dippable delight equally suited for vegetable crudities or crusty bread plus potentially dozens other uses. My recipe for Southwest Whipped Feta whips up in minutes and is sure to please, however you please!
So simple, so easy. Start with a container of Simply Artisan Reserve Feta Cheese Crumbles and bit of softened cream cheese. Add to lemon or lime juice, olive oil and Instantly Fresh Guacamole Blend seasoning, and whip it, whip it good. Actually, “whipped” might make you think of a stand mixer, but this easy appetizer is made in a blender or small food processor. Blend longer it until light and fluffy, or blend less to keep a bit more texture, as I prefer.
The salty taste of the feta cheese, tart of the citrus and mild guacamole seasonings creates a taste sensation that everyone will love, even the kiddos who say they don’t like feta cheese. Serve as an appetizer with veggies, crackers and breads or use as a topping for potatoes, pasta, pizza or spread for wraps and sandwiches. And, main dish proteins, like chicken, fish and lamb, become more feta-fantastic too, with a dollop on top.
