I made a pledge years ago to fill up half my plate with vegetables and my Sesame Roasted Green Beans with Mushrooms are on the menu almost every week. This no-fuss yet flavorful side dish is sure to appeal to both veteran vegetable lovers and newbies in need of upping their daily vegetable intake.

Roasting vegetables, like green beans and mushrooms, in the oven is extremely easy and just requires cranking up the heat, spreading out the produce in a single layer, and drizzling with olive oil or a light marinade. Walk away, go about your business for about 20 minutes, coming back once to stir up in the pan.

I love how the delicate tips of the green beans get lightly browned and crisped and how the mushrooms transform into almost “meaty” morsels of yum. I could eat the whole pan!

Up your veggie game on weekdays with our no-fuss yet flavorful side dish featuring green beans, mushrooms elevated with a light Asian-inspired glaze.  

Sesame Ginger Roasted Green Beans & Mushrooms on a platter with Litehouse Sesame Ginger Dressing
Ingredients
  • 12 ozFrench Green Beans, trimmed
  • 8 ozCarton Baby Bella or Cremini Mushrooms, sliced in half
  • 1 tbspOlive Oil
  • ½ tspSea Salt
  • ½ tspDried Red Pepper Flakes
  • ⅓ cupLitehouse® Sesame Ginger Dressing
  • 1 tspSesame Seeds

Directions

Heat oven to 400°F.Line a rimmed baking sheet with foil.Spread out the green beans and halved mushrooms in single layer on a pan.Drizzle with olive oil and sprinkle with salt and red pepper flakes. Begin roasting for approximately 10 minutes in oven.After 10 minutes, pour on the dressing and use a spatula to coat and redistribute vegetables.Roast for 10 more minutes.Remove from the oven and sprinkle with sesame seeds.
