Roasted Green Beans and Mushrooms with Sesame Ginger Dressing Recipe

Simple, low-stress vegetable dishes are a mainstay in my life. I made a pledge years ago to fill up half my plate with vegetables and my Sesame Roasted Green Beans with Mushrooms are on the menu almost every week. This no-fuss yet flavorful side dish is sure to appeal to both veteran vegetable lovers and newbies in need of upping their daily vegetable intake.

Sesame Ginger Roasted Green Beans & Mushrooms Recipe ingredients and prep

Roasting vegetables, like green beans and mushrooms, in the oven is extremely easy and just requires cranking up the heat, spreading out the produce in a single layer, and drizzling with olive oil or a light marinade. Walk away, go about your business for about 20 minutes, coming back once to stir up in the pan.  

I love how the delicate tips of the green beans get lightly browned and crisped and how the mushrooms transform into almost “meaty” morsels of yum. I could eat the whole pan!

To keep meal prep for this sheet pan vegetable recipe ridiculously easy, I use Sesame Ginger Dressing & Marinade from Litehouse Foods.  It’s made with fresh ginger, light soy sauce and sesame with zero fat, no artificial colors, flavors or preservatives. It’s zippy but not overpowering or overtly spicy, it complements recipes instead of “covering up.”

Sesame Ginger Roasted Green Beans and Mushrooms Recipe

Up your veggie game on weekdays with our no-fuss yet flavorful side dish featuring green beans, mushrooms elevated with a light Asian-inspired glaze.

 

Ingredients

  • 12 ounces French green beans, trimmed
  • 8-ounce carton baby bella (or cremini) mushrooms, sliced in half
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon dried red pepper flakes
  • 1/3 cup Litehouse® Sesame Ginger Dressing
  • 1 teaspoon sesame seeds

Directions

  1. Heat oven to 400F degrees.
  2. Line rimmed baking sheet with foil.
  3. Spread out green beans and halved mushrooms in single layer on pan.
  4. Drizzle with olive oil and sprinkle with salt and red pepper flakes. 
  5. Begin roasting for approximately 10 minutes in oven.
  6. After 10 minutes, pour on dressing and use spatula to coat and redistribute vegetables.
  7. Roast for 10 more minutes.
  8. Remove from oven, sprinkle with sesame seeds.
