Pomegranate Guacamole with Herbs

Give your everyday avocado mash-up a holiday makeover with my recipe for Pomegranate Guacamole with Herbs. It’s festive, it’s fun, it’s a super-fast, last-minute fix taking 10 minutes max to make. And, it’s super flavorful, too! Classic guacamole speckled with sweet, juicy, deep red pomegranate arils makes an unexpectedly scrumptious, delightfully sweet-savory addition to your holiday party menu.

The guacamole is prepared simply with just ripened avocados, key lime juice (or can swap for half lemon and half lime juice), a bit of sea salt, and my favorite guac-hack of all time– Litehouse Guacamole Herb Blend. This medley of freeze-dried herbs and spices features all the key players required for never-fail guacamole including red onions, cilantro, lemon peel, tomato, red chili, garlic and more. Once the convenient herb blend hits liquid or moisture in a recipe, it rehydrates and makes magic in nearly every dish – guacamole, soups, salad dressings, side dishes and more.

Guacamole with Pomegranate Arils

Turning Pomegranate Guacamole with Herbs into a festive holiday wreath presentation is easy, I’ve simply served in a round bowl and added clusters of pomegranate arils around the perimeter to resemble berries. The fresh herb of your choice (I’ve used rosemary) can be cut in sprigs and tucked in around the berries for evergreen leaves. Or, if in a super rush, just skip over the “decorating” and stir in the pomegranate seeds straight into the dip and skip the fresh herbs.  

While this 10-minute party appetizer is ideal for impromptu and stress-free holiday entertaining, it’s also a wholesome snack, salad addition, and taco topping that will bring joy to your life year-round. Enjoy!

Pomegranate Guacamole with Herbs Recipe

Serves 8 | Finish in 10 minutes

Fa-la-la-later, after your holiday party guests go home, you’ll be licking the bowl of this festive, flavorful guacamole that features pomegranate arils and herbs. It’s a delicious appetizer to serve with chips and dip veggies!   

Ingredients

  • ½ cup Key Lime juice
  • ½ teaspoon sea salt
  • ¼ jar Litehouse Guacamole Blend
  • 2 large avocados, peeled and seed removed
  • ¼ cup pomegranate arils
  • 1 bunch fresh herb of choice

Directions

  1. In medium bowl, add lime juice, salt and guacamole herbs. Let sit for one minute.
  2. Add peeled, seeded avocados to herb mix and use fork to mash up avocado to a mostly smooth consistency, leaving some small chunks. Ensure that herb and juice mixture has been evenly mixed into mashed avocado.
  3. Use a spatula to transfer guacamole to serving bowl.
  4. Place pomegranate arils in small, evenly-spaced clumps around perimeter of bowl. Alternatively, you can stir them all into guacamole if you don’t want the dip to look like a Christmas wreath.
  5. Snip herbs into smaller pieces and tuck into guacamole near pomegranate clusters to resemble leaves.
  6. Serve immediately with chips and/or dipping vegetables.
