Lemon Herb Potato Salad with Organic Lemon Herb Dressing

Talk about an easy side dish! This Lemon Herb Potato Salad hits the spot and is a breeze to prepare. With only a few ingredients you can serve up this salad warm, room temperature or cold.

Lemon Herb Potato Salad with Organic Dressing by Litehouse

I’m finding myself in the side dish dinner rut these days. My family is of little help with ideas of “I don’t know” or another common answer of “whatever” It’s up to me to keep things interesting. Not only for myself but I do like to keep a variety in the dinner rotation for all involved, even though they pretend not to care much. Nothing wrong with a roasted or mashed potato but sometimes I just want to kick things up a bit so I used Litehouse Organic Lemon Herb dressing and made a quick potato salad. I found a bag of multi colored mini potatoes that look so pretty in this dish and finished it with a sprinkling of Freeze Dried Parsley and Dill. It really couldn’t be any easier! 

We haven’t had a potato salad since the days of summer. It was a nice reminder of warmer weather and green grass. 

Normally when I think potato salad I typically go for a creamy version, but I’m sure glad I strayed and went a lighter route. Using Litehouse Organic Lemon Herb dressing was a perfect choice. It’s nice and bright with a hint of herbs. I remembered how good it was in my Lemon Herb chicken and rice. That’s one of the many great things about Litehouse dressings, they also make a great marinade!

Lemon Herb Potato Salad Recipe

Serves 6 | Finish in 20 minutes

A light and refreshing Lemon Herb Potato salad.


  • 2 lbs. Fingerling Potatoes
  • ½ c. Litehouse® Organic Lemon Herb Vinaigrette
  • Salt and Pepper, to taste
  • Litehouse® Freeze Dried Parsley
  • Litehouse® Freeze Dried Dill


  1. Place the potatoes in a large pan with enough water to cover them. Bring to a boil.
  2. Continue cooking the potatoes for 10-15 minutes or until fork tender.
  3. Drain and cool the potatoes completely. 
  4. Slice each potato in half and toss with salt, pepper and the Lemon Herb dressing.
  5. Garnish with parsley and dill. 
  6. Serve cold or at room temperature.
