Introduce Instantly Fresh Mint to Your Table with a Winter Cranberry Mojito

Mint is such a great herb to have around your kitchen and it can be used in a variety of sweet and savory settings. Mint goes really well with lamb, salad, watermelon and desserts. Remember my Watermelon Salad with Feta and Mint from earlier this year? This time around I decided to bring one of my favorite summer beverages into the holiday season. Let’s start by talking about the simple syrup for this cocktail. This is super easy to make and infusing the mint flavors into the sugar mix will keep you from drinking mouthfuls of Instantly Fresh Mint. When you strain the simple syrup it is okay if there are some mint flakes still in the mixture. This will add an extra burst of mint flavor in the mojito. 96-4447 Bringing the mix together is quite simple; Use a muddler to infuse the mint, cranberry and lime flavors together to form the base of your cocktail. Since cranberries don’t offer a lot of juices you can also add in a splash of white cranberry juice if you desire. Use a clear rum, club soda and ice cubes to complete the cocktail. I like to garnish the drink with a bit of fresh mint, because let’s face it, everyone loves a pretty cocktail.

Winter Cranberry Mojito

This twist on a classic summer favorite brings together mint and cranberries for the perfect holiday cocktail.

Ingredients

1 ½ cups water

1 ½ cups sugar

2 tablespoons Instantly Fresh Mint

8 ounces rum

2 limes sliced

Club soda

½ cup fresh cranberries chopped

Mint sprigs for garnish

Directions

Prepare the simple syrup by mixing together the water, sugar and mint. Boil over medium-low heat, stirring frequently until the sugar dissolves. Allow the mixture to sit for 2-3 minutes to cool. Pour the mixture through a fine mesh strainer to remove most of the mint leaves. Store in a cool place for up to 2 weeks. Prepare the mojitos by pouring 2 tablespoons of the simple syrup into each of the 4 glasses. Add in 2 lime slices to each glass and evenly divide the cranberries amongst the 4 glasses. Using a muddler, mix the ingredients together in each of the glasses. Place 2 ounces of rum into each of the glasses. Fill the glasses with ice and club soda and top them off with fresh mint sprigs. Serve immediately.
