Chickpea Shawarma Salad

It’s no secret that I’ve had a love/hate relationship with food textures for quite some time. I love guacamole but it has taken me a while to enjoy sliced or diced avocado. Similarly, I really enjoy hummus but there has just been something about the texture of chickpeas that really turned me off. Until I recently discovered how delicious a roasted chickpea could be!

I’ve seen a lot of recipes for roasted chickpeas featuring all different flavors. They make a great snack item and can be eaten much like popcorn. Since I love Middle Eastern flavors, I thought that I would try those out on the chickpeas and turn them into a delicious salad of similar flavors. Smoky flavors of cumin and paprika cover the chickpeas before being baked and the result is a crispy salad topping loaded with flavor and protein.

Litehouse has a delicious line of Greek yogurt dressings! There are some amazing flavors. My eyes lit up when I saw the Tzatziki Ranch because I can practically eat tzatziki sauce by the spoonful. (#guiltypleasure) I thought that this dressing would complement the salad perfectly and bring all of the Middle Eastern flavors together while leaving you with a deliciously healthy salad.

There’s no reason that you should be eating boring salads. Adding toppings like roasted chickpeas flavored with delicious herbs and spices can bring new life to your salad in a healthy way. I easily get discouraged when it comes to living a healthier lifestyle but when I keep flavors such as this in the rotation it is really easy to stay on track.

Chickpea Shawarma Salad

Serves 2 | Finish in 40 minutes

This vegetarian salad is packed with protein and flavor!



  • 1 15oz. can Chickpeas, rinsed, drained and dried in a clean towel
  • 1 tbsp. Olive Oil
  • 1 tsp. Cumin
  • 1/2 tsp. Smoked Paprika
  • 1/2 tsp. Turmeric
  • 1/2 tsp. Sea Salt
  • 1/2 tsp. Ground Cinnamon
  • 1/4 tsp. Ground Ginger
  • Pinch each Black Pepper, Ground Coriander + Cardamom


  • 5 oz. Spring Mix Lettuce
  • 10 Cherry Tomatoes, chopped
  • 1/4 c. Red Onion, thinly sliced
  • 1/4 c. Fresh Parsley
  • Handful of Pita Chips, slightly crushed
  • ¼ c. Litehouse® Purely Balanced Tzatziki Ranch


  1. Preheat oven to 400°F and position a rack in the middle of the oven.
  2. Add washed and dried chickpeas to a mixing bowl. Add olive oil and all seasonings and toss to combine. Sample a chickpea and adjust seasonings as needed. Arrange chickpeas in a single layer on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
  3. In the meantime, prepare all salad ingredients (not including the dressing or pita chips) and add to a bowl.
  4. Divide the salad between serving 2 dishes and top with pita chips and salad dressing.
