Bruschetta Chicken Recipe

I saw a meme shared recently on social media about people not realizing that they would have to figure out dinner every single day for the rest of their life. It seems daunting when you put it that way, but it really doesn’t have to be. Getting dinner on the table for your family is just something we have to do as adults. It is what it is!

Thankfully, we can find millions of delicious recipes at the tips of fingers and don’t need to have a bunch of old cookbooks hanging around the kitchen. Litehouse is a prime example of a fabulous site with loads of yummy recipe ideas. This Bruschetta Chicken that I’m sharing today here on their site is a winner and comes together super easily!

I’ve been making this recipe for my family for years so I can tell you right now that it is a keeper. If you are a fan of the appetizer, try Bruschetta topping with your favorite cut of chicken. I prefer chicken breasts, but you could use whatever cut of chicken you had at home.

The best part of this recipe, in my opinion, is the topping. It’s SO GOOD! I’m talking can’t stop eating it right from the bowl good. You need to prepare it first so the flavours have a chance to mingle together and make magic.

All you need is Roma tomatoes, Litehouse® Freeze Dried Garlic, Litehouse® Freeze Dried Basil, extra virgin olive oil, balsamic vinegar and salt. The garlic and basil will soften as the mixture sits and marinates. Besides the tomatoes, you barely have to do any chopping.

I also like to brown my chicken first in extra virgin olive oil and butter. I find it adds a really nice flavor and color. You’ll finish baking the chicken in the oven.

To serve this recipe, simply pile on the Bruschetta topping on the baked chicken breasts. It’s easy peasy!

I love how you get the fresh flavor of the Bruschetta and savory taste of the chicken in each bite. Serve with a side salad, rice or veggies and you have a wonderful dinner to serve to your family.

Bruschetta Oven Chicken Recipe

Serves 5 | Finish in 40 minutes

A delicious dinner recipe to serve to your family. Seasoned chicken breasts are cooked to perfection and then covered in a flavorful Bruschetta topping made with tomatoes, garlic and basil. This easy meal will make you a weeknight dinner hero and is ready in only 40 minutes.


  • 5 boneless, skinless Chicken Breasts
  • 2 tsp. Garlic Powder
  • 2 tsp. Italian Seasoning
  • 1 tsp. Salt
  • ½ tsp. Pepper
  • 3 Roma Tomatoes, chopped
  • 3 tsp. Litehouse® Freeze Dried Garlic
  • 1 tbsp. Litehouse® Freeze Dried Basil
  • 2 tbsp. Extra Virgin Olive Oil, divided
  • 1 tsp. Balsamic Vinegar
  • 1 tbsp. Butter


  1. Preheat oven to 375°F.
  2. In a medium bowl, stir together tomatoes, Litehouse® Freeze Dried Garlic, Litehouse® Freeze Dried Basil, 1 tbsp extra virgin olive oil, ½ tsp salt and Balsamic vinegar. Set aside for the flavors to combine.
  3. In a small bowl, stir together garlic powder, Italian seasoning, ½ tsp salt and pepper. Sprinkle mixture over both sides of the chicken breasts.
  4. Melt butter and 1 tbsp extra virgin olive oil in a skillet over medium heat. Add chicken breasts and sear 5 minutes per side. Remove from heat and place chicken on a baking sheet.
  5. Bake for 25 minutes or until chicken is thoroughly cooked.
  6. To serve, add chicken to a platter and top with Bruschetta. Enjoy!
