20-Minute Chicken Caesar Pita Pockets

I know that I probably have complained about it here and there but I seriously have been on-the-go constantly as of late. I love the fact that I travel frequently but sometimes it just tends to take a toll on my body and mindset…and on my diet. I find myself eating out more and more because I don’t feel like cooking at home and making a huge mess in the kitchen. I’ve been trying to come up with some go-to recipes that require very little mess to be made in my kitchen. My latest favorite: Chicken Caesar Pitas.

One of my guilty pleasures is a delicious Caesar salad. I love those little salad kits that you can get in the grocery store but often find that the dressing is a bit ‘bleh’ for my taste. Often times I ditch the packet of dressing an opt for Litehouse Caesar Dressing because I honestly keep that stocked in my refrigerator. It’s much more flavorful than any other Caesar dressing that I’ve tried.

I was eating one of these delicious salads last week when it dawned on me how delicious it would be to have all of this salad goodness packed into a pita pocket. I know that this seems like a really simple recipe but it was genius! And then I added chicken and my night was complete.

If you’re in a dinner rut or in a rush to make dinner for your family, this meal comes together very quickly. My local grocery store also offers pre-grilled chicken breasts that make this meal even more simple. With life being so busy I try to make things as easy as possible without going out to dinner every night. Don’t get me wrong, I love someone waiting on me, unfortunately my pocket book will not allow for that lifestyle!

20-Minute Chicken Caesar Pita Pockets

Serves 4 | Finish in 20 minutes

This deliciously easy meal is perfect for family dinner during the week. Pairing together grilled chicken with rich and flavorful Litehouse Caesar dressing will be sure to please everyone!


2 6-ounce boneless, skinless chicken breasts, grilled

3 cups chopped romaine lettuce

1 cup diced tomato

¼ cup Litehouse Caesar dressing

4 whole wheat pita breads or mini naan breads

¼ cup shredded Parmesan cheese


Chop the chicken breasts into strips or bite-sized pieces. Place the chicken in a medium bowl.

Add in the lettuce, tomato and Caesar dressing and toss to combine.

Warm the pita or naan bread in the oven for 2-3 minutes. Divide the chicken mixture evenly between the breads.

Top with the Parmesan cheese and serve.
