Spicy Apple Cider Glazed Chicken Breasts

Serves 4 | Finish in 40 minutes

Two unlikely combinations making one must try dish!


For Spicy Apple CiderGlazed Chicken Breasts:
4 (4-oz.) chicken breasts, boneless, skinless, & halved
Cooking spray
¼ cup spicy brown mustard
¼ tsp. salt
¼ tsp. ground red pepper
Salt & Pepper, to taste
1 cup Litehouse® Apple Cider
Or any of the following:
Litehouse® Gala Apple Cider
Litehouse® Honeycrisp Apple Cider

For Gorgonzola Cheese Grits:
28 oz. fat free chicken broth
¾ cup uncooked quick cooking grits
1/3 cup fat free sour cream
¼ tsp. ground nutmeg
¼ tsp. fresh ground black pepper
1 cup Litehouse® Gorgonzola crumbles


For Spicy Apple CiderGlazed Chicken Breasts:
Preheat oven to 350°. In a saucepan, boil the Litehouse® Cider until it is reduced to about ¼ cup. Combine with mustard, salt, red pepper and pepper to taste. Place each chicken breast between 2 sheets of heavy duty plastic wrap and flatten to a ½ inch thickness using a meat mallet or rolling pin. Place the chicken breasts in a baking pan coated with cooking spray. Brush the glaze over the chicken. Bake for 20 minutes at 350°. Cut the chicken into ½ inch thick slices.

Serve on a bed of rice, Or try our Gorgonzola Cheese Grits!

For Gorgonzola Cheese Grits:
Bring the broth to a boil in a medium saucepan, gradually add grits, stirring constantly. Reduce heat to low, simmer covered for 5 minutes or until thick, stirring occasionally. Remove from heat; stir in remaining ingredients. Yield: 4 cups (serving size: 1 cup)
