- 1 c. Cooked Quinoa
- 2 c. Spinach or Mixed Greens
- 1 can Chickpeas, drained and rinsed
- 1 c. Diced Cucumber
- 1 c. Quartered Cherry Tomatoes
- Litehouse® Purely Balanced Lemon Basil Greek Yogurt Dressing
- Feta Cheese
Cook quinoa according to package directions. Set aside and let cool.
To assemble jar, start with desired amount of dressing. Add cooled quinoa, followed by greens, chickpeas, cucumber, tomatoes and feta. Seal jar and refrigerate for up to 3 days or enjoy right away.
