Fruit Rainbow with Cheesecake Cloud Dip

This year my daughter wants a beach themed birthday party.  Every year around May I start to get a bit anxious and slightly terrified of what she’ll request.  In the past we’ve done a lot of princess parties – easy!  Then moved on to animals.  Pandas and most recently, the Pig.  That one was actually pretty fun.  I sat up at night making tiny pigs out of pink fondant to sit on top of her swimming pig cake.  I can’t imagine not having the internet to reference for ideas!  Then came  American Girl.  Wow!  Just who is this Grace and why are her clothes more expensive than mine?  

On the snack table will be all the usual suspects.  Chips, crackers, cheese and other fun finger foods.  I wanted to try out a few homemade beach themed snacks in advance of her party so I made a colorful rainbow out of various cut up fruit.  Of course, fruit usually disappears faster with something fun to dip on the side.  Cheeeecake cloud dip it is!

I used creamy cheesecake greek yogurt dip with whipped topping.  My ratio was one part yogurt dip and two parts whipped topping, which pipes like a dream!  It can be made ahead of time without worry.  The swirl stayed perfectly still in the fridge from morning to night.   As for the rainbow, I used a normal white dinner plate and went from bottom to top with the dip bowl in place so the grapes and blueberries didn’t roll around.

I’m relieved this year and highly recommend a Beach theme if you have a summer party or birthday coming up.  Chances are, most decorations and party favors will be readily available.  Flip flops, shells, pale or bright blues and lots of fruit in season!

1/3 cup Opadipity Creamy Cheesecake Greek Yogurt Dip

2/3 cup whipped topping




Green and Red Grapes



1. In a bowl combine 1/3 of the yogurt dip and 1/3 cup of whipped topping. 

2. Stir until combined then fold in the remaining 1/3 cup of whipped topping. 

3. Scoop or pipe into a serving bowl and refrigerate. 

4. Create the rainbow by arranging the fruit on a platter or plate.
