Just made Caramel Apple Breakfast Bars

We’re a couple months into school lunches and both kids are getting bored with the usual snacks in their lunches. I find switching it up with a homemade treat really gets them excited! It’s crazy that Halloween is right around the corner but it made me think of caramel apples – which in theory is something that sounds fun to make but then I’m left with so many in the house with little self control. Instead, I’ve made a caramel apple breakfast bars. They double as a school snack and breakfast on the run. Filled with oats, bananas and apples and with no oil, they’re a great alternative to the traditional caramel apple!

I used normal milk to use up the remaining container in my fridge but any milk will do if you need to substitute for allergies. This recipe is so flexible. Don’t worry about the size of your banana or apple either. I’ve made a variation of this recipe so many times in so many different ways. It will work out, trust me! One tip for the apple is when you’re peeling it just go ahead and keep using the vegetable peeler for extra thin slices. This ensures the apple will be nice and soft after the quick bake time.

I had the kids help me drizzle the warm caramel over top – this is both fun for them and ensures they’re more likely to want to eat it later. Don’t you find that when kids get involved with shopping and cooking they’re so proud they’ll eat it right up? Of course they do their fair share of taste testing while we bake.

They enjoy Litehouse Old Fashioned Caramel best and dip apples, strawberries and bananas quite regularly in the afternoons.

If you’re looking for lower calorie and fat option, Litehouse has those too – which may come in handy once I get my hands on all the mini chocolate bars I’ve spotted in stores!

 

 

Caramel Apple Breakfast Bars Recipe

These Caramel Apple Breakfast Bars are fast, delicious, and full of fall flavors! Keep your kid's lunches exciting this fall with this delicious snack!

Stack of Caramel Apple Breakfast Bars
Ingredients
  • 1 lgBanana, Ripe, mashed
  • ½ cupBrown Sugar
  • 3 tbspUnsweetened Applesauce
  • ½ tspVanilla
  • 1 eaEgg
  • 1 cupMilk
  • 1 ½ cupOats
  • ½ cupAll Purpose Flour
  • ½ tspBaking Soda
  • ⅛ tspSalt
  • 1 eaApple, thinly sliced
  • ½ cupLitehouse® Old Fashioned Caramel

Directions

Preheat the oven to 350°F. Line an 8 inch baking pan with foil and lightly coat with cooking spray. Mix together the banana, brown sugar, applesauce, vanilla, egg and milk.Add the oats, flour, baking soda and salt and stir to combine. Fold in the sliced apple.Pour the batter in to the prepared pan.Evenly pour the caramel over the batter. Lightly run a knife through the caramel to swirl.Bake for 20 minutes. Cool 10-15 minutes before lifting the bars out.Slice and serve.
