• Rosemary Pork, Kale and Brown Rice Stuffed Acorn Squash

    This is one of my favorite times of year- when the grocery stores get stocked with in-season apples and winter squash! Acorn squash is on of the most nutrient-dense squash varieties and it is packed with fiber and vitamins and minerals such as Vitamin C, Vitamin A among others. I love that acorn squash is a little sweet and it’s almost like a dessert when topped with cinnamon and brown sugar!

    For years I have been making the exact same dressing for Thanksgiving. Every. Single. Year. Before I starting cooking it my mother made it. Every. Single. Year. Don’t get me wrong now, that is the dressing that always made Thanksgiving feel like Thanksgiving, but this is the year for change. I can feel it.   • Crab and Blue Cheese Stuffed Mushrooms Recipe

    Where has the time gone? The holiday season is in full swing, it can’t be avoided! Every store I enter has the tunes going, decorations are hung and all my favorite things to buy are front and center. I can’t even help myself; I filled a cart today in record time. Table cloths, mitt and toque baskets, cute little penguin pajamas and all the other “must haves” including some nice new appetizer plates for upcoming holiday parties. We’ve been so busy lately with work and volunteering I needed a little retail therapy!
