Idaho Blue Cheese Potato Salad

Try this tasty salad as a hearty side dish for your next barbecue or potluck.


3 lbs. unpeeled new potatoes, quartered
3/4 cup Litehouse® Bleu Cheese Crumbles
1/2 lb. bacon, diced, cooked until crisp, crumbled
1 Tbsp. Litehouse® Freeze-Dried Parsley
1 tsp. ground black pepper
1 tsp. Litehouse® Instantly Fresh Red Onion
8 oz. Litehouse® Original Bleu Cheese,
Litehouse® Bacon Bleu Cheese, or
Litehouse® Big Bleu


Place potatoes in a large saucepan and cover with salted water. Bring to a boil and cook until potatoes are tender; drain and rinse with cold water to stop cooking process. In a large bowl, combine remaining ingredients; stir in potatoes. Cover and refrigerate 2 hours for flavors to blend. Serve chilled. Serves 8
