Greek Salad Flatbread with Mozzarella Cheese & Olives Recipe

As time has passed and I’ve entered my mid-thirties (ah-hem) I have become more and more health conscious. I find myself paying attention to labels and reading more about how the things that I put into my body are affecting my overall well-being. I’m not 100% organic but I do tend to buy only certain varieties of organic meats and produce. One of my other switches that I’ve made recently has been in my salad dressing which was the inspiration for these quick and easy Greek Salad Flatbread.

One of the main reasons that I go organic on a handful of food items is that organic foods tend to have more nutrients. Typically, the soil used to grow organic foods is managed and nourished differently than commercially grown foods. Organic foods tend to be higher in iron, vitamin C, magnesium and phosphorous. This probably explains why most organic produce items tend to taste more flavorful!

I figured if I was taking the time to carefully choose organic ingredients for my salads that it only made more sense to top them off with an organic dressing. The Organic Litehouse Balsamic Vinaigrette is packed with flavor and is 100% organic, so you can feel good about eating it. I decided to toss the arugula used on my Greek Salad Flatbread with this dressing for an extra boost of flavor.

These flatbreads are great for a Meatless Monday meal, a party appetizer or to enjoy on a weekend over a glass of wine with friends. I didn’t go 100% organic on this flatbread but you can certainly try to find all of the ingredients in organic form if you’d like. I did use the Simply Artisan Reserve Feta Cheese Crumbles because I know that they are rBST-free!

Directions

Preheat the oven to 400°F.Brush the olive oil on the flatbread crust. Top with mozzarella cheese, artichoke hearts and olives. Bake for 5-6 minutes, until the cheese has melted.While the flatbread bakes toss together the arugula, tomatoes, red onion and feta cheese with the balsamic dressing.Remove the pizza from the oven and cut into 6-8 pieces. Top the flatbread with the salad mix and serve immediately.
