I have a recipe for you to bring to your next summer potluck. This Cucumber Pasta Salad is super simple to whip up in just five minutes. You can easily make it the night before and pop it in the fridge for the next day.
I tried a different kind of pasta this time around. Have you heard of Veggiecraft Farms Cauliflower Penne Pasta? It’s made with cauliflower flour (try and say that twice!), lentil flour and pea flour. It’s really good. My spouse didn’t even know that I switched out the pasta! It’s a great way to sneak some extra veggies into your meals especially if you have picky eaters at home.
I like using English Cucumbers because you don’t have to peel them. You can find them any time of year. The Field Cucumbers are harder to come by in my area in the colder months of the year.
Each bite of this delicious Cucumber Pasta Salad is crisp and creamy. I used Litehouse® Feta Dill Dressing & Dip and a little bit of extra feta cheese for an even bigger pop of flavor. So good.

I recommend making the recipe in advance and giving it some time in the fridge to chill. That extra chill time will allow the flavours to mingle together even more.
This recipe makes a large amount of salad so it’s great for leftovers or when you have company to feed. If you are feeding a smaller group of people, you can halve the recipe. I don’t mind having extra food because it will typically get eaten by my family in the next day or so. My spouse is notorious for raiding the fridge at night for leftovers!
