Caramelized Onion, Zucchini and Blue Cheese Grilled Pizza Recipe

Caramelized Onion, Zucchini and Blue Cheese Pizza hot and ready to eat
Ingredients
  • 1 eaPizza dough at room temp
  • 1 tbspextra virgin olive oil
  • 4 ozLitehouse Simply Artisan Blue Cheese Crumbles
  • 1 eaChives for garnish
  • Caramelized Onions:
  • 1 ealarge sweet onion
  • 1 tbspextra virgin olive oil
  • ½ tspbrown sugar
  • Charred Zucchini
  • 2 easmall zucchini
  • 2 tbspextra virgin olive oil
  • ½ tspkosher salt
  • ¼ tspblack pepper
  • Roasted Garlic
  • 3 cloveslarge garlic
  • 2 tspextra virgin olive oil
  • 1 eaPinch of kosher salt

Directions

First prepare toppings. To roast garlic, layer two sheets of tin foil then add whole garlic cloves with skin on and drizzle with olive and salt. Fold up the sides of the tin foil and form a parcel and pinch the ends together. Roast in a preheated oven at 425˚F or on the grill until garlic is soft and tender, about 20 minutes. Cool slightly then squeeze garlic out of skin and smash into a paste.Cut onion in half, peel and thinly slice into half circles. Heat a skillet on medium-low then add olive oil then onion slices and brown sugar and cook, stirring occasionally until onions are caramelized, about 15 minutes.Meanwhile thinly slice zucchini, add slices to a bowl and toss with olive oil, salt and pepper until slices are evenly coated. Grill or broil zucchini until they are nicely charred, about 5 minutes. To broil, line a sheet pan with tin foil and lay zucchini out into 1 even layer.Heat grill to about 500˚F. If you have a pizza stone, heat it on the grill for about 10-20 minutes while the grill is preheating. If you don’t have pizza stone then just heat up the grill.Dust the work surface and dough with flour and stretch dough out into a 12-14 inch round with floured hands. Then place dough onto a piece of parchment paper on a pizza peel. If using a stone continue on to step 6. If not, then brush the stretched dough with olive oil and grill that side of the pizza crust directly on the grill grates over direct heat for about 45-60 seconds. Then remove from the grill with tongs and flip so the uncooked side is facing down on the pizza peel and continue on to step 6.Drizzle olive oil over the stretched dough then brush on smashed roasted garlic so the entire crust is lightly coated in oil and roasted garlic. Top with caramelized onions and charred zucchini followed by Litehouse Simply Artisan Blue Cheese Crumbles.Slide pizza still on parchment paper onto the hot stone or slide pre-grilled crust without parchment directly on grill grate and cook with the grill cover down until the crust is cooked through and cheese is melted, about 5 minutes.Garnish with chopped fresh chives and cut and serve hot.
