Caesar Salad with Roasted Chickpeas

Love Caesar salads again without adding all the calories! Add a little crunch by topping with roasted chickpeas and guilt-free drizzle of our Litehouse Purely Balanced Garlic Caesar. Only 45 calories per serving!

Ingredients
  • 1½ cupRomaine Lettuce, chopped
  • ½ cupChickpeas, cooked, drained, and roasted
  • 1 eaOlive Oil
  • 1 eaSalt, to taste
  • 1 eaPepper, to taste
  • ½ eaAvocado, sliced
  • ¼ cupParmesan
  • ¼ eaLemon, cut lengthwise
  • 1 eaPurely Balanced Garlic Caesar to taste

Directions

To prepare roasted chickpeas, toss chickpeas in olive oil, and add salt & pepper to taste. Preheat oven to 425 degrees Fahrenheit. Add chickpeas to a parchment paper lined baking sheet. Bake for 20 to 30 minutes, turning the chickpeas halfway through.Layer lettuce, chickpeas, avocado and parmesan on a dinner plate. Drizzle with Purely Balanced Garlic Caesar to taste. Serve with a lemon wedge. Enjoy!
