Blueberry Pomegranate Brie Cheese Cake Appetizer ready to eat

But it doesn’t stop there, a drizzle of Pomegranate Blueberry Dressing from Litehouse Foods ties the whole hors d’oeuvre together with the festive zing of vinaigrette. Serve this brie appetizer on a bed of spinach or baby greens to take full advantage of this bright, light and vibrant salad dressing.

To maintain the copycat look of a sweet cheesecake dessert, this appetizer is best served at room temperature. Too cold, and the brie becomes too difficult to parcel off onto a cracker, yet when baked, the soft-ripened cheese loses shape and the fruit and jam slide off.

While it doesn’t show off the creamy cheese quite as well, feel free to substitute a small round of brie, instead of the large wedge which can be requested from the cheese counter at your market. Another consideration is the rind. The rind of brie is actually edible, and I like to keep it on to both keep the wedge intact and trick the eye into thinking it’s frosting! However, an option is remove the rind from the top layer before adding the remainder of recipe ingredients, as that’s where most people will begin to dig in.

Just made Blueberry Pomegranate Brie Cheese Cake Appetizer
Ingredients
  • 1 ea8-oz. Wedge or Round of Brie
  • ¼ cupBlueberry Jam
  • 1 eapt. Blueberries
  • ¼ cupPomegranate Arils
  • ¼ cupLitehouse® Pomegranate Blueberry Vinaigrette Dressing
  • 2 ozBaby Spinach Leaves
  • 2 tbspSlivered Almonds

Directions

Slice brie in half through the center to create a top and bottom. This is easiest done when cheese is at a cold temperature.If desired, scrape or cut off the rind. However, this is not necessary as the rind is edible and helps the cheese keep its shape.Spread blueberry jam, split evenly, on the cut side of one layer (to be bottom) and the rind side of the other layer (to be top). Place bottom layer, rind side down, on a plate covered with spinach leaves.Cover jam on bottom layer with blueberries and pomegranate arils, drizzle lightly with dressing. Gently place top layer, jam side up, atop blueberries on bottom layer. Repeat process with top layer, adding a generous drizzle of dressing that extends onto the greens.Sprinkle spinach leaves with almond slivers and remaining fruit. Serve at room temperature with bread and/or crackers.
