Imagine that you are sitting on a deck overlooking the ocean, enjoying some time away from the everyday with your family. Now imagine that your entire family is sitting on this deck together enjoying a delicious dinner together after a fun day on the beach. And to take it a step further, imagine your family enjoying a delicious Blueberry Balsamic Salad, some tasty grilled chicken and freshly sliced watermelon together. Sounds pretty amazing, doesn’t it?

Let me reel you back in for a moment to talk about the purpose of this post. First, let’s rewind to my mention of that tasty Blueberry Balsamic Salad. Sweet and tart all in one bite and oh-so-fresh. I love to bring this salad to all of my summer cookouts and family gatherings because it really does scream summer. The white balsamic vinegar offers a cleaner and crisp taste over a traditional balsamic vinegar. It complements the sweetness of the blueberries and brings together all of the flavors on your palate to satisfy all of your summer flavor cravings.

Blueberry Balsamic Summer Salad Recipe

The sweetness of fresh summer blueberries combined with the tart flavor of white balsamic vinegar come together to form the perfect summer salad combination.

Taking a bite of Blueberry Balsamic Summer Salad
Ingredients
  • 6 cupLeafy Spring Mix
  • ½ cupBlueberries
  • ¼ cupThinly Sliced Red Onion
  • ⅓ cupAlmond Slivers
  • 1 eaLitehouse® Simply Artisan Feta Cheese Crumbles
  • For the dressing:
  • ⅓ cupOlive Oil
  • ⅓ cupWhite Balsamic Vinegar
  • 1 tbspFresh Lemon Juice
  • 1 tbspHoney
  • ¼ tspPepper

Directions

In a large bowl, combine the spring mix, blueberries, red onion and almond slivers.Prepare the dressing by combining the olive oil, vinegar, lemon juice, honey and pepper in a small measuring cup. Whisk to combine ingredients.Drizzle the salad dressing over the salad mix and toss the salad to coat. Sprinkle the Feta Cheese Crumbles on top of the salad to your liking and serve immediately.
