- 2 tbsp. Extra Virgin Olive Oil
- 1 tbsp. High-Quality Balsamic Vinegar
- 2 1/2 tsp. Honey
- Large Pinch Salt
- 1/2 tsp. Freshly Ground Black Pepper
- 6 large Dried Dates, finely diced
- 1 tbsp. Capers, rinsed, drained, and finely chopped
- 1/4 c. Pitted Green and Kalamata Olives
- 1 tsp. Litehouse® Freeze Dried Thyme
- 2 Litehouse® Simply Artisan Reserve Blue Cheese Center Cuts
- Bread and Crackers, for serving
- In a small bowl, whisk to combine olive oil, balsamic vinegar, honey, salt, and pepper. Set aside.
- In another bowl, combine dates, capers, olives and thyme. Add vinaigrette and toss to combine. Remove half of the mixture and place on a cutting board. Chop until very finely diced then add back to bowl and toss to combine. Season to taste with additional salt and pepper.
- Serve at room temperature on top of Simply Artisan Reserve Blue Cheese Wheels with bread and crackers.
