If you’re looking for the all-around perfect food, let’s turn our attention to the meatball. In my opinion, meatballs are one of the most versatile foods around. You can eat them on sandwiches, over pasta, in soup…the list goes on. I decided that I was going to turn a classic Mediterranean dish into a meatball and eat it with one of my other favorite foods: tzatziki sauce.
Kofta is a traditional Mediterranean spiced meat, often found wrapped around a stick and grilled. Kofta is traditionally made with ground lamb, which I am not a fan of, so I went with ground beef. You can also make these with ground lamb if you’d like. Once cooked, you’ll wrap up these tiny meatballs in a warm piece of pita bread or naan and serve with diced cucumber and red onion and a healthy drizzle of Tzatziki Ranch dressing. Are you drooling yet?
If you look through the ingredients of these little meatballs you’ll notice a handful of full-bodied flavors such as cumin, coriander and mint. Don’t skimp out on any of these thinking the flavor of one will be too strong. If you are a fan of robust flavors, you won’t mind the combination presented here. You may also consider serving these meatballs over rice or adding sliced tomatoes to the pita for an extra dose of fresh flavor.
My husband is often skeptical of new foods that I make but he told me that we need to start making these meatballs more frequently. I served mine with miniature naan bread that I found at my local grocery store for a soft, pliable sandwich. If you can only find pita bread, that’s fine too.
