Mint isn’t just for mojitos; it can complement everything from chocolate to soups. Mint is often used in Middle Eastern, Thai and Vietnamese dishes, but why is mint one of the most underutilized herbs in most homes today?

Mint’s versatility can make the perfect addition to drinks, desserts and savory meals. You can’t say that about too many other herbs!

I love mint in my water with lemon. Also, my absolute favorite dish is from a Vietnamese restaurant near us who serves big bowls of pho with flavorful mint, basil and cilantro. I love mint, I just haven’t cooked with it enough.

Add these broccoli, pea and mint patties to your recipe box. A few of you might be hesitant at first with these ingredients. Broccoli and Peas?!

Yes, just trust me.

There’s just something about peas and mint that go well together. Combine those healthy veggies with dried mint and some breadcrumbs and parmesan cheese and it’s a surprisingly delicious side dish or addition to a lunchbox. It’s even more delicious when you serve them with a Litehouse dip or dressing.

These broccoli, pea and mint patties are a healthy addition to any lunchbox. Serve with any of Litehouses’s dips or dressings!

Batch of Baked Broccoli, Pea and Mint Patties
Ingredients

Directions

Preheat oven to 425°F and line a baking sheet with parchment paper. Place all of the ingredients in a food processor. Pulse until everything is finally chopped and combined.Form 1/2 cup of the mixture into patties. If desired, coat each patty with extra breadcrumbs and cheese. Place the patties on the lined baking sheet and bake about 12-15 minutes. Serve with any of Litehouses’s dressings or dips!
