We’ve been enjoying dinners on our N E W back patio, and I can tell you it’s been so nice and relaxing to take a break from everything and just get outside as a family, even just for a simple dinner. Like last night’s burger bar - a great, easy idea for Father’s Day, too! Set out all sorts of toppings, have someone man the grill and let everyone get down with their own creations.
Last night, though, Dad was beat after a long day of prepping the house for sale so I actually made up his burger for him (and even had the boys stand in as waiters to deliver it 😉 – so cute!) His burger, made with Litehouse Simply Artisan Blue Cheese Crumbles, bacon, habanero jelly and whiskey sautéed onions, actually ended up being my favorite creation of the night.

¼ cupHabanero pepper jelly, jalapeño jelly or chili onion jam
1 eaSalt and pepper
1 eaMixed greens, lettuce or arugula
1 eaFresh thyme
1 eaCrumbled bacon
Make whiskey onions. Combine 1/2 a sliced onion, 1 ½ tablespoons butter, ½ teaspoon sea salt, and ½ teaspoon fresh thyme or ¼ teaspoon dried thyme in a skillet over medium heat – cook, stirring frequently, until soft and browned about 15 minutes. Deglaze with ¼ cup whiskey (or beer or stock) and set aside until ready to use.In a large bowl, mix ground beef and chopped bacon until combined. Using a light hand, form burger patties and stuff with a few blue cheese crumbles.When ready to grill, season with salt and pepper and grill until cooked through.Toast pretzel buns and smear with habanero jelly. Top with bacon burger patty, Litehouse Simply Artisan Blue Cheese Crumbles, whiskey sautéed onions and whatever else your heart desires – lettuce (or a pickle!), fresh thyme and crumbled bacon are totally optional but totally recommended 😊
