During these busy days of summer getting stuck in a boring chicken breast rut is too easy. While chicken is certainly better than take out, your body is missing the fats and nutrients that only fish can offer. This is the time of year when we are most active and our bodies really need that extra push. So what’s your excuse for not eating your weekly fish? No time to prepare? Not enough ingredients on hand to make it taste delicious? Is fish too finicky to cook? My excuse was, well all of those! Until recently.

My recipe for 20 Minute Balsamic Herb Salmon over Spinach Brown Rice will blow any excuse out of the water and will have you eating salmon 3 nights a week at least! Fresh Salmon Fillets are coated in Litehouse’s Organic Balsamic Vinaigrette then topped with a surprising sweet herbed coating. I’ll bet you have every ingredient needed in your kitchen right now.

The herb topping does double duty not only as a delicious sweet and nutty topping for the salmon but also turning plain brown rice into a healthy and flavorful side dish. Preparation is as easy as measuring out handfuls and tossing it all into a food processor! No chopping, no peeling, no grating. Just throw it all in let her rip. It doesn’t get much easier than that!

My new method for cooking salmon fillets is what I’m really excited to share with you. A quick blast under very high heat will result in perfectly flaky and insanely moist salmon. Every. Single. Time. Not even I have managed to screw up salmon since learning this super easy cooking method. Now that’s really saying something! I was once the master of drying out fish to nearly inconsumable levels. Just ask my husband, I think he nearly choked to death once…   There you have it! No more excuses, not that you’ll need them after trying this recipe. Take care of that summer body and eat your fish folks! Your skin, your hair, your heart, and your mind will thank you!

20 Minute Balsamic Herb Salmon with Spinach Brown Rice Recipe

Salmon is topped with a sweet and nutty herb topping then cooked to perfection. Served over a simple herbed spinach brown rice.

Just served 20 Minute Balsamic Herb Salmon with Spinach Brown Rice
Ingredients
  • 1 eaQuick Cooking Brown Rice, box
  • 1 eaFrozen Spinach, box, thawed and drained
  • 3-4 eaSalmon Fillets
  • 1 eaOrganic Balsamic Vinaigrette
  • 1 eaWalnuts, handful
  • 1 eaGolden Raisins, handful
  • 2 eaParsley, Fresh, handfuls
  • 2 clovesGarlic
  • 1 eaJuice of Lemon
  • 1 eaSalt and Pepper, Pinch

Directions

Preheat the oven to 400°F. Get the brown rice cooking according to package directions. Place the salmon fillets in a baking dish lined with parchment paper. Drizzle each fillet with 2 tablespoons of the Organic Balsamic Vinaigrette.Throw remaining ingredients into a food processor. Pulse until a chunky pesto texture is achieved. Set aside ¼ cup of the herb topping mixture, spread the remaining mixture over each salmon fillet.Cook in the preheated oven for 15 minutes. Stir the spinach and reserved herb topping into the cooked brown rice. Serve with lemon slices and parsley sprigs if you’re feeling fancy.
