Here is a great way to pack a healthy yet fun lunch for your school age kids that keeps them eating healthy!
¼ cup reduced-fat cream cheese
2 whole grain tortilla
3 Tbsp corn kernels
2 Tbsp shelled edamame beans
¼ cup grated carrots
6 grape tomatoes sliced crosswise into 4 sections each
¼ cup shredded red cabbage
2 single-serving containers of Litehouse® Ranch Veggie Dippers
Mix together cream cheese and feta cheese in small bowl.
Spread cheese mixture evenly across two tortillas.
Arrange raw vegetables in a layered arch to resemble a rainbow.
For a more attractive presentation, roll tortillas up from side to side of rainbow (as opposed from top to bottom of rainbow). With a knife, cut each tortilla in to 4 crosswise slices on a slight diagonal. Secure with toothpicks, if needed.
Serve with a single-serving container of Litehouse Food’s Veggie Ranch Dippers.
