Tuscan Lemon-Lime Chicken with Grilled Grapes

Outdoor entertaining is a breeze this summer, even on a budget! Tuscan Lemon-Lime Chicken with Grilled Grapes overflows with farm stand flavors without draining wallets dry – leftover party funds can put toward a centerpiece watermelon salad or extra bottle of wine!


3/4 cup Litehouse® Tuscan Herb with Lemon Dressing (divided)
2 Tbsp. lime juice
4 6-oz. boneless, skinless chicken breasts
2 sliced limes or lemons
1 cup green grapes
1/3 cup Litehouse® Feta Cheese Crumbles


Combine ½ cup dressing and lime juice in large zip top bag. Add chicken, seal bag, flip a few times to coat and let sit in refrigerator for 3o minutes. Heat grill to 400F degrees (medium-high). Thread grapes and citrus slices on separate skewers. Set aside. Remove chicken from zip-top bag and discard marinade. Grill chicken for approximately 7 - 8 minutes per side, or until meat thermometer reads 165 F degrees when inserted in thickest part of breast. Add grape and citrus skewers during the last 5 minutes of grilling, flipping once. To serve, top chicken with grapes and citrus slices that have been removed from the skewers along with a sprinkling of feta cheese. Drizzle with remaining ¼ cup dressing.
