These cookies are the first to disappear at every holiday gathering. They take some time to assemble, but are well worth the effort.
2 cup butter, softened
1 tsp. vanilla
4 cup flour
3 egg whites, beat with fork until foamy
2 cup crushed pecans
3/4 cup Litehouse® Original Caramel Dip or Low Fat Caramel Dip
2 cup powdered sugar
2 cup meltable chocolate wafers (like Merkens)
Preheat oven to 325 degrees. Mix butter, vanilla, sugar and flour into a soft dough. Roll into 1" balls. Dip each dough ball into the egg whites and then the crushed pecans. Place on ungreased cookie sheet, 1" apart. Make a thumbprint into each ball. Bake 15 minutes or until light brown on the bottom of cookie. While still warm, drop a teaspoon of Litehouse Caramel Dip into the center of each cookie. Melt the chocolate wafers in the microwave on low for 1-2 minutes, stirring after each minute. When the cookies are cool, drop melted chocolate over the top of the caramel, just enough to cover. Let harden and serve.
