Turkey and Quinoa Pitas

Serves 4-6 | Finish in 25 minutes

These whole wheat pitas are filled with hummus, ground turkey, quinoa and fresh vegetables and topped with Opa by Litehouse Greek Yogurt Feta Dill dressing.


1 lb. ground turkey
1 cup cooked quinoa
½ cup diced roasted red pepper
½ cup Litehouse feta
¼ cup plus 2 Tbls. Opa by Litehouse Feta Dill dressing
4-6 whole-wheat pitas
1 small cucumber
½ cup diced kalamata olives
1 cup diced red pepper
5 Tbls. hummus
1 tsp. Litehouse Instantly Fresh dill
Salt and pepper


In a bowl, combine the ground turkey, feta, roasted red pepper, 2 Tbls. feta dill dressing and salt and pepper to taste. Over medium-high heat, cook the turkey mixture until the turkey is browned, about 5 minutes. Meanwhile, dice the cucumber, kalamata olives and red pepper. Spread 1 Tbls hummus on each Pita. Top with about a ½ cup turkey and quinoa mixture. Divide the cucumber, kalamata olives, red pepper and feta dill dressing evenly between the pitas. Top with Litehouse Instantly Fresh dill.
