1lb. fresh tortellini any flavored filling
1 cucumber chopped
1 red bell pepper chopped
1 yellow bell pepper chopped
1 red onion chopped
1 pint grape tomatoes halved
1 handful fresh herbs such as parsley or dill
1/2 head purple cabbage shredded
1/2 cup Simply Artisan Reserve Feta Cheese Crumbles
1 bottle Litehouse Greek Vinaigrette
Bring a pot of water to a boil. Boil the fresh tortellini according to package directions and drain. Meanwhile toss the remaining ingredients in a large bowl. Gently toss in the tortellini and serve.
