This Thai Peanut coleslaw is a light and fresh take on the traditional summer barbecue side dish. It’s delicious on top of burgers, chicken or by itself!
10 oz. package of shredded cabbage
3 cups shredded carrots
1 cup thinly sliced red pepper
3 cups thinly sliced cucumber
2 Tbls Litehouse Instantly Fresh Cilantro
1 Tbls Litehouse Instantly Fresh Basil
3/4 cup Litehouse Thai Peanut Dressing
¼ cup Greek Yogurt
½ cup peanuts
salt and pepper
Place all of the ingredients in a large bowl and stir together.
