A zesty bean salad which will complement any meal. Great with fish or chicken. Easy to prepare, best if made a day ahead and refrigerated.
2 15 oz. cans dark red kidney beans, rinsed and drained well
1 red bell pepper, seeded and chopped
3 scallions, chopped, whites and greens
1 rib celery, chopped
1/4 cup chopped flat-leaf parsley
1 cup sweet red pepper relish
Litehouse® Classic Caesar dressing
Coarse salt and pepper
Combine all ingredients in a medium bowl and toss well; adjust seasonings to taste and add Litehouse® dressing.
