Don't let a love for comfort food hold you back. You can enjoy this Primavera Pasta Salad without letting calories run away with you!
2 cups dry penne or similar pasta
1 cup blanched and chopped thin asparagus, about 20.
2 tbsp Instantly Fresh spring onions
1 small zucchini, diced.
1/4 cup OPA by Litehouse Tzatziki Ranch Greek Yogurt Dressing
salt and pepper to taste
Bring a large pot of water to a boil. Before adding the pasta, drop the asparagus in for 30 seconds and spoon out. Rinse the asparagus with cold water and set aside.
Cook the pasta to al dente in the same water. Drain and rinse with cold water to stop the cooking process.
Place the pasta in a large bowl with the asparagus, spring onions and zucchini.
Fold in the cucumber and dill dip and season with salt and pepper. Chill the salad in the fridge an hour before serving.
If you're serving the pasta salad the next day, stir in an extra tablespoon of dip just before serving.
