Pho-Inspired Slow Cooker Chicken Noodle Soup

This chicken noodle soup has an aromatic broth made in the slow cooker and inspired by the delicious Vietnamese Pho Soup.

Ingredients

Ingredients:,
For the Slow Cooker Broth,
2 lbs. bone-in chicken breasts thighs or other pieces,
4 cups chicken broth,
4 cups water,
1 small onion,
1 carrot,
1 Tbls Litehouse Instantly Fresh Cilantro,
2 Tbls Litehouse Instantly Fresh Ginger,
1 Tbls Litehouse Instantly Fresh Basil,
1 tsp Litehouse Instantly Fresh Lemongrass,
1 tsp coriander seeds,
3 whole cloves,
1 tsp salt,
8 oz. rice noodles,

For garnishes:,
1 Tbls Litehouse Instantly Fresh Mint,
1 Tbls Litehouse Instantly Fresh Basil,
1 Tbls Litehouse Instantly Fresh Cilantro,
1 lime,
1 jalapeno,
1-cup bean sprouts,

Directions

1. Place the chicken in the slow cooker. Sprinkle with salt.
2. Add remaining ingredients for the broth into the slow cooker and cook on low 6-8 hours.
3. Remove chicken from broth and set aside.
4. Strain slow cooker broth over cheesecloth or a colander and reserve broth. Discard onion, carrots and herbs.
5. Cook rice noodles according to package.
6. Divide noodles and chicken between 4-6 bowls. Pour broth over the top and top with your preferred Litehouse herbs and other garnishes.
