Pepperoni Waffled Grilled Cheese, Marinated Broccoli and Mozzarella and Baked Sweet Potato Chips

It’s back-to-school time already! Here’s a delicious and healthy lunch idea for kids.


Pepperoni Waffled Grilled Cheese, 2 slices wheat bread, ½ cup shredded Colby Jack Cheese, 6 turkey pepperoni slices, ½ tsp. Litehouse Instantly Fresh Italian Herb Blend, Marinated Broccoli and Mozzarella, 1 cup broccoli, 1/2 cup fresh mozzarella pearls, ½ cup Litehouse Organic Balsamic Vinaigrette, Baked Sweet Potato Chips, 1 sweet potato, 1 Tbls Olive Oil, 1 Tbls Honey, ¼ tsp. cayenne pepper, dash of salt and pepper, 1 tsp. Litehouse Instantly Fresh Thyme,


1. Preheat a waffle maker and spray with non-stick spray. Place bread, cheese, Italian Herb seasoning, pepperoni slices in order and top with remaining slice of bread. Cook until golden brown. 2. Preheat oven to 450. Slice sweet potato with a mandolin slicer then toss with oil, honey and thyme. Bake for 7 minutes. Flip the sweet potatoes and bake 7 minutes more. 3. Place the broccoli and mozzarella in an airtight container. Pour the balsamic vinaigrette over the broccoli and cheese and refrigerate overnight.
