Mother's Day Breakfast In Bed

Serves 1 | Finish in 40 minutes

We're keeping things light this Mother's Day with Blackberry Orange Mint Compote over Greek Yogurt and Apple Thyme Turkey Sausage. Don't weigh Mom down with a calorie buster breakfast in bed! Give her what she wants, a light and healthy breakfast that is as beautiful as it is flavorful.


For the Compote 
1 c. fresh blackberries
1/4 c. fresh orange juice
1 Tbsp. sugar
1 tsp. Litehouse Instantly Fresh Mint
Greek yogurt
Mom's favorite granola

For the Sausage
1 lb ground turkey
1 Granny Smith apple peeled and finely chopped
1 small onion finely chopped
1 tsp. salt
1 tsp. Litehouse Instantly Fresh Thyme
1/2 tsp. fennel seeds
1/4 tsp. pepper
1 slice wheat bread crumbled
1 egg


In a small pot combine the blackberries, orange juice, and sugar. Cook over medium heat, stirring often, until mixture is thick about 20 minutes. Stir in the mint. Meanwhile heat a skillet over medium heat with a bit of coconut oil. Add the onion and apple and cook until softened and slightly browned. Add the salt, thyme, fennel, and pepper and cook 2 minutes longer. In a bowl combine the turkey meat, apple mixture, bread, and egg. Heat a nonstick pan over medium heat and spray with non stick spray. Use an ice cream scoop to create even sized balls of the meat mixture and place them in the hot pan. Gently press each down to create a patty shape. Cook 3-5 minutes on each side until well browned on the outside and no longer pink inside. Fill a cup with Greek yogurt and stir in enough honey to slightly sweeten it. Top yogurt with the compote and a bit of granola. Serve along side Turkey Sausage Patties, fresh fruit, and extra granola.
