Mesquite Chicken Salad


2 chicken breasts, grilled and sliced
1 tbsp mesquite seasoning 2 slices bacon, cooked and crumbled
½ cup Cheddar Cheese
1 cup cherry tomatoes, halved
½ cup Corn
¼ Tbsp Litehouse® Instantly Fresh Cilantro
1 cup Crispy tortilla strips
2-3 cups romaine or iceberg mix lettuce
½ cup Litehouse® Lite Salsa Ranch or
Litehouse® Jalapeno Ranch 


Season both sides of chicken breasts with the Mesquite seasoning. Preheat grill and grill chicken 5 inches from heat source 6 minutes per side or until chicken is cooked through. Slice crosswise into ¼ inch slices. In a large bowl, mix lettuce, cilantro, corn, cherry tomatoes, cheddar cheese, crumbled bacon, and crispy tortilla strips. Place the grilled chicken on top. Pour on Litehouse BBQ Ranch dressing (or substitute Salsa Ranch or Jalapeno Ranch dressing). Serve while chicken is still warm.
